Roasted Spiced Salmon, Lobster Mashed Potatoes and Syrah Jus

Ingredients (Serves 4)

  • 2 lb. Yukon Gold potatoes (6-8 medium)
  • 4 garlic cloves, peeled
  • 1 t. salt
  • ½ t. black pepper
  • 4 T. butter
  • ½ cup sour cream or crème frache (or more…)
  • 4 strips crispy bacon, crumbled
  • ½ cup cooked lobster meat
  • 2 T. olive oil
  • 4 4-oz Salmon filets
  • 1 T. salt
  • 1 t. black pepper
  • 1 t. garlic powder
  • 1 t. paprika
  • 1 t. thyme
  • 2 T. butter
  • 2 T. shallots
  • 1 T. garlic
  • 1/3 cup red wine
  • 2 cups beef stock
  • 1 T. fresh tarragon (dried will do in a pinch)
  • 2 T. butter

Directions

Heat oven to 450 degrees. Boil potatoes and garlic cloves in plenty of salted water until potatoes are soft. Drain and add salt, butter and sour cream. Hold in a warm place.

While potatoes are boiling, melt butter and sauté shallots and garlic. Add red wine and reduce until almost evaporated. Add beef stock and reduce by half. Add butter and tarragon. Set aside and keep warm.

Mix salt, pepper, garlic powder, paprika and thyme together. Rub Salmon with spices and olive oil. Roast in oven 10-12 minutes or until fish is medium rare (130 degrees).

Mix warmed mashed potatoes with bacon and lobster. Serve Salmon over top of lobster mashed potatoes and surround with Syrah jus.
