Ingredients for the Burgers

  • ¼ cup crumbled feta cheese
  • 2 tablespoons light brown sugar
  • 1 tablespoon freshly chopped mint
  • 1 teaspoon sea salt
  • 1 teaspoon granulated garlic
  • ½ teaspoon fresh ground black pepper
  • 1 pound 80% ground beef
  • 6 slider buns or Hawaiian style rolls

Ingredients for the Caramelized Onions

(Makes 1 lb.)

  • 1 large Vidalia onion (about 1 lb.) sliced
  • 3 tablespoons light brown sugar
  • 2 tablespoons olive oil
  • 1 teaspoon balsamic vinegar
  • ½ teaspoon sea salt
  • ½ teaspoon black pepper

Directions

Heat oil over medium heat in medium sized sauté pan. Add onions into a single layer and sprinkle with salt and pepper. Stir to coat and reduce heat to low. Cook, stirring often until onions soften, about 10 minutes. Add brown sugar and vinegar. Continue to cook an additional 5-10 minutes until a nice deep golden color. Cool and store covered in refrigerator for up to 3 days. Re-warm the onions before topping burgers.

Ingredients for the Spicy Zin Catsup

  • 2 (6 ounce) cans tomato paste
  • 1/4 cup white vinegar
  • 1/2 tablespoon brown sugar
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1/4 teaspoon allspice (optional)
  • 1 teaspoon salt
  • 1 teaspoon molasses
  • 1 tablespoon Sirachi (garlic chili sauce)
  • ½ cup Gregory Graham Zinfandel

Directions

Mix everything together in a medium saucepan and bring to a boil. Reduce heat and simmer for 20 minutes or until thick and bubbly. Let cool and pour into a squeeze bottle. Will keep in the refrigerator for a week.
